Vinegar-based shrubs were first popularized in Colonial America as an alternative to citrus juices in the preservation of berries and other fruits. The resulting sweet and sour syrup can be mixed with carbonated soda and served as a soft drink or used as a mixer in alcoholic cocktails. We'll be mixing up a variety of syrups using seasonal fruit paired with different types of vinegar for our summer shrubs.
